Corn Soup with Red Dates

Yes, naming this soup as Corn Soup with Red Dates. Is utmost sweetness after a night of boiling in slow cooker. This A-B-C soup is definitely a nutritional meal for at least 2 persons serving. Ideal for small family like me. And, is relatively easy to cook, especially the use of slow cooker. Practically no need to look after at all. Therefore, I call this a 30 minutes recipe.

Here is the recipe. Try it.

5-6 pieces of pork ribs, blanched
2 ears sweet corn, chopped equally size
1 big onion, peeled and cut into quarters
5 small potatoes, peeled
1 regular carrot, chopped equally size
3 fresh tomatoes, cut into halves
10 pieces red dates, washed
Handful of Guo Qi Zhi (wolfberries), washed
1 litre of water
Pinch of salt to taste

Cooking Method: -

1. Boil the water in a big pot.
2. Use hot water to blanch the pork ribs for at least 2 times.
3. Rinse the pork ribs with cold water before adding into the boiling water.
4. Add in corn, onion, carrot, red dates and wolfberries.
5. Boil all ingredients and add in tomatoes before the heat is off.
6. Transfer to slow cooker and simmer for 1 hour or desired.
